Farm Fresh Salad

From Episode 5: "Herbs & Spices"

  • 3 whole Beets, roasted, peeled, and sliced
  • 4 oz soft goat cheese, broken into small pieces
  • 6-8 Nasturtiums
  • ¼ cup Dried apricots, chopped
  • An Assortment of Fresh Greens

Dressing:

  • Juice of half a lemon
  • ¼ cup olive oil
  • Salt
  • Pepper

Coat the beets in olive oil, sprinkle with kosher salt, place in a roasting pan, and roast at 500 degrees for 45 minutes. The beets are ready when they are tender when pierced with a fork. Peel the skins off of the beets and slice them.

Assemble the salad by laying the greens on a platter, place the rest of the ingredients on top and dress the olive oil, lemon juice, salt, and pepper.
