Chipotle Dip

1 cup vegan non-hydrogenated sour cream (Tofutti brand recommended)
2 tbsp lime juice
1 tbsp agave
1-2 tsp chipotle powder
½ tsp garlic powder
¼ tsp sea salt

Butternut Squash and Spinach Enchiladas

Sauce:
2 tbsp extra virgin olive oil
1 yellow onion, small dice
2 cloves garlic, minced
½ tsp sea salt
½ tsp ground pepper
1 large can diced organic tomatoes
2 tsp unbleached all-purpose flour or 2 tsp arrowroot powder mixed with 2 tsp water

We all love a fiesta, but global appreciation of tequila has spurred a shortage of agave, the plant that is the source of the golden spirit. Less pure agave means less pure tequila, which affects the quality of your margarita and impacts the environment too.

Like authentic bubbly from the Champagne region of France, real tequila (i.e. government-certified) comes from just five states in Mexico. When you purchase tequila from states like Jalisco, you're protecting biodiversity (mass production of tequila has forced scientists to come up with creative cross-pollination strategies) and supporting small farmers, while ensuring that you're shooting the real stuff, not a concoction of agave juice and sugar.
