Summer is the season for tomatoes and basil! But with pesto usually off-limits for people with food allergies—it traditionally contains tree nuts and dairy—I set about creating an allergen-free version of the original. The sweet and tangy roasted cherry tomatoes are the perfect compliment to the earthy flavor of the basil and the smokiness of the grilled chicken. Upon tasting this recipe, my 4 1/2 year-old son, Lennon (who has food allergies) even asked, "Can I have this pasta for lunch every day?" There is no greater compliment.

Pasta, the staff of life. They say it's bread, but I don't think so. Does bread come in over 350 shapes, colors and sizes? Does bread have never-ending sauce options? Can you eat bread alone every single night? No, but you can eat pasta for dinner 7 days a week, with pleasure. "But how can you still eat pasta when you're on an allergen-free diet?", one might ask. If you're one of the 12 million Americans with Food Allergies, you're probably avoiding one or more of the following foods; wheat/gluten, dairy, eggs, soy, peanuts, tree nuts, fish, or shellfish. Given that pasta dishes are generally comprised of wheat/gluten, dairy, and eggs, and sometimes tree nuts, or fish and shellfish, eating pasta may seem like an impossibility. Not so! Go back to the basics, with simple, fresh, organic produce and allergen-free pasta will be the centerpiece of your summer table.

I adore basil in numerous forms - seasoning marinara sauce, pounded into pesto, or sandwiched between mozzarella and tomato - but I'm about to enjoy the herb on an entirely new level.

Ocimum basilicum (a.k.a. sweet basil) is the Italian staple and Ocimum sanctum (a.k.a. holy basil a.k.a. tulsi in India) is its close cousin. In addition to flavoring foods, both basils can be used in several healing capacities. In Ayurveda tulsi is used to prepare the mind and heart for spiritual work, to reduce fever, and to treat colds and flu.

Inspiration: Like most of you, when I heard of recycling to save the earth, I naturally assumed I needed to separate my plastics, newspapers and glass. I was helping. That was all I needed to do. Then one day, I was searching around for something fun, some art, and I came across this abstract piece. It was gorgeous - it looked like a naturally formed wave of icy white water bursting into the air. When I looked closer at it, I saw that it was made from recycled plastic caps. I was in shock. What kind of imagination and talent does that take to look at a plastic cap and see more to it then what it actually is? How can someone be so ingenious that they can take something that we normally throw away and create such a piece of beauty with it? This is the thought process that I could not stop pondering and it took over my mind, body and soul and soon enough became my muse. I began Earth's Journey for this reason. I wanted to show the world that there was more to saving the earth than just recycling. There is beauty in things we can't even imagine, and so many ways to help our planet flourish. There are products out there that we all could use to completely decorate, furnish and run a home... all environmentally safe. You can buy organic bedding, non-toxic cleaning detergents, solar power, or make a change in a small way by using energy-efficient light bulbs. But the best part of recycling and being eco-friendly is the beauty that you'll find here, with all of our different artisans. As you can see I'm very passionate about this type of artistic creativity, and I hope you will be too. I invite you to sit back, relax and ... Be Inspired by Green!
