how do you get your veggies?

i am always looking for ways to sneak more veggies into our meals.
would love to hear what others are doing to amp up the veggies!
currently i shred carrots, beets and onions and sneak them into burgers. 
 i made this one up when some friends of mine with many food allergies came over for dinner - yummy, dairy free, gluten free, vegetarian and loaded with veggies!

Veggie Loaded Portabella Mushrooms
to make six large mushrooms or 12-15 small

shred three carrots and two beets in the food processor

stem mushrooms and huck the stems in the food processor

cook greens 1 bunch- any kind pick your favorite, i like kale in this recipe
saute until soft - huck into the food processor

add one jar/can of either hearts of palm or artichokes rinsed to the food processor

add six sundried tomatoes to the food processor

add some pine nuts (optional)

turn on the food processor until all ingredients are pureed.

fill mushroom caps with the "veggie paste"

bake at 350 for 20 minutes or grill outside

Sounds interesting.  I don't have a food processor, could you use a blender instead?  I bake with veggies for my kids.  Carrot cake, zucchini bread and their favorite, pumpkin muffins.  They tend to like sweet things, so I try and sneak them in that way.  I use yogurt and organic oil so they are healthy as well.

I'm pretty good about getting my veggies in. But there ARE days when I might fall short.  I buy the small cans of Low Sodium V8.  TOTALLY feel like I'm getting in those veggies w/out much difficulty.  Tastes yummy too!

Think of the waste you are creating by getting your veggies the "easy" way.  Ironic.

great suggestions, reminded me what to do with all of the zucchini my neighbor just gave to me.
i bet if you cut up all the veggies really small and then used the blender you could still do the veggie loaded mushrooms and burgers.

I too drink v-8 in a pinch.  I really like the stuff and the cans are recycleable.  I eat a lot of salad and try to put as many veggies in it as possible.  Marinating asparagus in balsamic vingegar and roasted beets are always a tasty treat.  I nibble on them throughout the day.

do you eat the marinated asparagus uncooked? - do you marinate over night????
i eat the beets raw - i use a potatoe peeler and slice thin into my salads

In a pinch

When I am grilling, I also grill up some extra veggies. I keep them in the freezer and pull them out in a pinch. We like to make veggie pizza with them. The other thing is we do a lot of pasta with veggies. Like broccoli chopped and put into the sauce. One day when I was in a pinch for soup I came up with this combo. I had a frozen bag of oriental stir-fry vegetables' that had asparagus, broccoli, peppers and carrots. I put in a pot with 4 cans of vegetable broth and added onions, garlic with a can of rotel tomatoes'. When the vegetables tender it still need something. I threw in some mixed pasta. I turned out great. We have repeated that many times. I also make a veggie rice casserole.

these are all great, thank you for taking your time to share your ideas! freezing your left over grilled veggies for pizza is awesome!  soup is always a good idea and with fall right around the corner, i'll have to keep this in mind.  i'm hungry, think i'll head over to the kitchen now :)

I steam asparagus then marinate them with a little balsamic vinegar for overnight.  They are delicious as a snack or in salads.  I could go through bunches of them.  They are a just a little sweet with a kick.  Yum.

Hide them Veggies!

I am not so hot on just digging into a pile of vegetables. But this is a major problem with eating right! So my favorite place to add them is to soups and sauces. Onions, peppers, tomatoes, celery, etc. can all be sauteed until really flavorful, blended until smooth, and added into a soup or sauce. (Of course, you still add all the veggies originally called for also). Depending on the flavor of the food, you can add some appropriate pureed vegetables to boost flavor and nutrition with minimal calorie increase!

Why is it that if my kids see a veggie they freak out, but if it is concealed, I have a better chance?  Is is the thought of veggies even before we taste them that throws us off or the idea that if something is good for us, it must taste terrible?

Kale Shakes

I get a good amount of veggies (and fruit) by making great tasting shakes. Patricularly, I make Kale shakes in the morning with banana, mango, goji berries and some other stuff.....GREAT way to start off the day!

with bananna, molasses, an apple, pumpkin and apple cider.
