Watercress Everyday !

Watercress can spark up you salad and possibly protect you against cancer.  Studies show that eating the veggie daily lowered DNA damage in healthy adults.  The veggie is crisp and peppery and you can add it to salads and sandwiches.  Don’t be shy with it.  By using it, you can increase your blood levels of the antioxidant lutein.  A restaurant I go to makes there Greek Salad with it, a good twist to an old favorite. Any more ideas?

I have never bought watercress on my own from the grocery store.  I never thought it of and am now wondering why this is.... I actually probably only have it when I'm at a restaurant and do not even realize that's what I'm eating.  It's interesting to know that it might protect against cancer.  I'm going to look into that more.  What are some recipes that use watercress?

This site is all about watercress.  I am going to bookmark it myself and try some of the recipes.  It seems you can do a lot with it.

Thank you Vicki for sharing this site!  It's great!  There are so many recipes to try.  I just spent the last half hour or so browsing them and picked out a few that I would like to try.  I'm planning a grocery store trip this weekend so I might have to get some of the ingredients and start cooking.

Tomato Eggflower Soup with Watercress

Hi Vicki,

 When I was living in England in the 80's, a great little Chinese restaurant made the most amazing tomato eggflower soup with stewed tomatoes (I use fresh heirloom toms and cook them in broth long eough to soften them down) a healthy helping of watercress added at the last minute, just long enough to wilt it, not long enough to destroy the enzymes in the herb. You can use a fortified veggie broth (I like Imagine Foods brand) instead of organic chicken if you're vegetarian, but the eggflowers, IMO, are essential...though I suppose you could subtract them for a vegan dish. Very healthy and fortifying on a crisp autumn evening and lots of Vitamin C!

 Hope you enjoy this, now I'm going to have to make a batch for dinner...

That sounds like a great recipe,, but what are eggflowers?  I have never heard of them.  Soups are a wondeful meal and always seem to make me feel good.  I wonder what it is.  Can you also freeze this soup or should you omit the watercress until you are ready to eat it?

I accidently grabbed some at the market the other day, I had meant to grab spinach (that's what I get for shopping while talking on the phone!)  I actually was wondering what to do with it today so as not to waste it.  I will have to add it to a salad tomorrow!  I'm so excited to try a new twist to my salads!  Thanks Vicki.
