Roasted Vegetables on Focaccia

Ingredients
1 zucchini cut lengthwise into 1/4 inch slices

1 yellow summer squash cut lengthwise into 1/4 inch slices

1 red onion cut into 1/2 inch slices

2 red bell peppers

2 T extra virgin olive oil or canola oil

1 T balsamic vinegar

1/2 tsp dried oregano, crushed

1/2 tsp garlic powder

1/2 tsp salt

1/2 tsp pepper

2 cloves garlic

1 12X12 inch piece foccacia bread

Perparation

  • Preheat oven to 400degrees F.
  • Place zucchini, onion and summer squash in large bowl.
  • Cut bell peppers into quarters. Remove stems, seeds and membranes.
  • Add to bowl with other ingredients.
  • Pour over vegetables and toss to coat evenly.
  • Arrange vegetables on baking sheet and roast until the vegetables are browned on the edges. About 15 minutes.
  • Remove from oven and let cool.
  • Cut foccacia into six 6X6 inch pieces. Then split each piece in half.
  • Pile on roasted vegetables. Cover with bread top.
